ffmpeg: Update to version 5.1.2
- Update from version 4.4 to 5.1.2
- Update of rootfile
- avresample has been removed from ffmpeg and so ./configure option had to be removed
- many libraries had an so bump so checked with find-dependencies - nothing flagged
